Sweet Potato with Spinach and Cheese

  1. Preheat oven to 400°F.
  2. Rub sweet potatoes with olive oil and sprinkle with sea salt and pepper.
  3. Baked sweet potatoes for 60 minutes or until tender. Allow sweet potatoes to cool then slice vertically.
  4. Chop 1 cup spinach into small pieces then boil for 5 minutes and rinse in cold water. Set aside.
  5. Heat pan over medium high heat with 2 tbsp olive oil then cook bacon according to package direction. Set aside and slice into bite sizes.
  6. Using the same pan, heat 2 tbsp olive oil and add 2 cloves minced garlic, 3/4 cup spinach and 1/2 cup heavy cream. Let it simmer for 3 minutes then season with salt and pepper.
  7. Allow sauce to thicken then stir in 1/2 cup cheddar cheese and 1/8 tsp crushed red pepper flakes.
  8. Put sauce into sweet potatoes and sprinkle with bacon and spinach.
  9. Best serve while hot.
