Roast Pork Roulade

  1. Slice 1kg pork lengthways, 1 to 2cm from the bottom of the pork.
  2. Using mallet, pound the pork to an even thickness. Set aside.
  3. Using large frying pan, add 100g chopped bacon, 2 chopped onions, 150g mushrooms and 100g chopped walnuts. Cook for 10 mintues.
  4. Preheat oven to 180°C.
  5. Spread filling over to flattened pork and roll up. Tie securely using kitchen string.
  6. Using mortar and pestle, crush 1/2cup walnuts and 2tbsp pepper. Cover the outside of the roulade using this mixture.
  7. Heat 4tbsp oil and heat roulade 5 mins each side. Transfer to a roasting tin and spread the top of the pork roulade with butter.
  8. Roast pork roulade in the preheated oven for 1hr.
