Pata Kare Kare
1. Peanut Butter
2. Crushed Peanuts
3. Shrimp Paste

  1. In a large cooking pot, add 2 quarts of water. Bring to a boil.
  2. Add 3 tsp salt and 2lbs Pata. Simmer for 1 hour.
  3. Remove Pata from the cooking pot. Set aside.
  4. Using separate cooking pot, saute 1 clove of garlic and minced onion.
  5. Add 1/2 tsp ground pepper and cooked pata. Cook for 2 minutes.
  6. Add 2 tbsp fish sauce, 1 1/2 crushed peanuts, 1/2 cup peanut butter and 1tbsp annatto powder and stir.
  7. Pour in 2 cups beef broth. Bring to a boil.
  8. Simmer for 20 minutes. Add water as necessary.
  9. When the texture thickens, add 2 medium sliced eggplant, 1 1/2 cup string beans and bunch of pechay. Cook for 7 minutes.
  10. Transfer to a serving bowl. Best serve with shrimp paste.
