pork cubes with vegetables in tomato sauce

  1. In a medium bowl, toss 2 1/2 pound pork cubes, 1/4 cup flour, 1/2tsp salt and 1/2tsp black pepper.
  2. Using large pot, add 3tbsp olive oil and pork cubes. Cook for 8 minutes.
  3. Add 2 leeks, 1 cup shallots and 4 large minced garlic. Cook for 3 minutes. Add 1 cup white wine and stir, scraping the bottom of the pot to remove browned bits.
  4. Add 5 peeled carrots, 4 peeled potatoes, 2cups chicken stock, 1 chopped tomatoes, 2tbsp vinegar, 2 bay leaves, 1tsp dried basil, 1tsp dried oregano, 1tsp thyme, 2tsp salt and 1tsp pepper. Simmer for 5 minutes.
  5. Add cooked pork into the stew. Simmer for 30 minutes.
  6. Add 10 ounces mushroom and continue simmering for 10 minutes.
  7. Garnished with parsley.
