Pineapple Fried Rice

  1. In a medium pot, cook 1 1/2 cups brown rice according package directions. Set aside.
  2. Cut pineapple in half and hollow out both halves to make pineapple bowls. Then cut the pineapple into small pieces. Set aside.
  3. Using frying pan, add 1tsp oil and 1 1/4 peeled shrimp and cook for 5 minutes. Saute 5 large scallions, 1 chili pepper and 3 cloves garlic. Add cooked brown rice, 1tbsp soy sauce and 1tsp fish sauce. Stir and cook for 1 minute.
  4. Transfer into the hollowed out pineapples. Garnish with 2tbsp spring onion and cutted pineapple bits.
