mediterranean chicken with roasted vegetables

  1. Preheat oven to 180°C.
  2. In a roasting tin, spread 250g baby potatoes, 1 sliced courgette, 1 red onion, 1tsp pepper and 6 plum tomatoes. Lay chicken on top of the vegetables.
  3. Mix 3 tbsp olive oil and 1tbsp green pesto and spoon evenly over the chicken. Cover with foil and cook for 30 minutes.
  4. Remove foil from the tin and cook for another 10 minutes.
