Chiken Fajitas

  1. For Filling: In a bowl, mix 1 tbsp shortening and 2 tbsp flour.
  2. Add 1 ½ lb ground pork, 2 large chopped onions, 6 chopped spring onions, 3 tbsp chopped parsley and a pinch of salt and pepper to taste.
  3. Cook thoroughly before placing in dough.
  4. For Pastry: Sift 4 cups of flour, 2 tsp baking powder, ½ cup melted shortening and 2 eggs.
  5. Add milk to make stiff dough then thinly roll the dough.
  6. Cut circles of dough using a saucer.
  7. Fill half of the dough with meat mixture.
  8. Fold over dough, damp edges with water and crimp with fork.
  9. Fry until golden brown.
