Cheezee Scalloped Potatoes

  1. Preheat oven to 350°F and grease a baking pan with cooking spray.
  2. Using large pot, boil 5cups of water. Add 2 pounds potatoes and cook for 20 minutes. Remove and set aside.

  3. For the cheezee sauce:
  4. In a saucepan, melt 1/4cup butter and whisk 1/4 cup flour. Cook for 2 minutes or until flour is golden brown.
  5. Add 2cups milk. Stir until thickened for 3 minutes. Remove from heat and add 2 1/2 grated cheezee. Add 1tsp salt and pepper.
  6. Peel cooked potatoes and slice into 1/8 inch rounds.
  7. In a baking dish, place 1/3 of the potatoes overlapping in a single layer. Spoon 1/3 cheezee sauce on top of the potatoes. Repeat for two more layers.
  8. Sprinkle with 1/2cup shredded cheezee and 1/8tsp paprika.
  9. Bake for 25 minutes.
  10. Garnish with 1tsp chives.
