Chiken Fajitas

  1. In a large saucepan, cook 1 tbsp butter, 1 small diced onion and 1 cup dice carrots over medium high heat.
  2. Add 2 cups chicken broth, 3 cups fresh broccoli, 1/2 tsp thyme, 1/2 tsp garlic powder, 1 tsp salt and pepper. Simmer until broccoli softened.
  3. Set aside 1 cup of vegetables then using a blender, blend the remaining 2 cups of vegetables and broth.
  4. Place 2 tbsp flour in a small bowl then add in 1 1/2 cups light cream. Whisk in blended vegetable mixture for 3-4 minutes.
  5. Remove from heat, stir in 1 cup milky white cheese, 1/3 cup parmesan cheese and the reserved vegetable.
  6. Serve soup while hot.
