Apple Berry Crumble Oat with Vanilla Ice Cream Topping

  1. Preheat the oven to 375 degrees F. Butter a 2-quart shallow baking dish or eight 6-ounce ramekins.
  2. Make the topping:
  3. •Whisk the ½ cup rolled oats, ¾ cup all-purpose flour, ½ cup brown sugar and pinch of salt in a bowl. Stir in with 7 tablespoons unsalted butter until evenly moistened.
  4. Make the filling:
  5. •Peel the apples and cut into 3/4-inch chunks. Toss with 2 cups berries, 3 tablespoons granulated sugar, 2 tablespoons all-purpose flour, 1 tablespoon vanilla, pinch of freshly grated nutmeg, pinch of ground cinnamon and pinch of salt in a large bowl.
    •Transfer the filling to a dish and add with 2 tablespoons butter. Squeeze handfuls of the crumble mixture and scatter on top of the fruit. Bake until golden and bubbly, 40 to 45 minutes.
  6. Let sit 10 minutes before serving. Top with vanilla ice cream.
