Chiken Fajitas

  1. Place the 8pcs pork cutlet between two sheets of plastic wrap, and pound lightly with a mallet or meat pounder. Sprinkle with 1 tsp. salt and 1 tsp.pepper to taste.
  2. Flour the cutlets lightly, and shake to remove the excess.
  3. Beat egg, sprinkle with salt and pepper. Dip the pork cutlets in the mixture.
  4. Blend 4 tbsp. parmesan cheese and the 1 cup bread crumbs in a flat dish. Dip the cutlets in the mixture, coating both sides.
  5. Heat the ¼ cup oil in a large nonstick skillet, and cook the cutlets over medium heat until golden brown.For the sauce:
  6. Meanwhile, heat the olive oil in a saucepan. Add 2 tbsp. chopped garlic and cook briefly; do not brown. Add 5 ripe chopped tomatoes, salt, pepper, pepper flakes and chopped basil.Cook over medium heat about 5 minutes.
  7. To serve, divide the tomato mixture on each warmed serving plate, and place the cutlets over the sauce.
