Chiken Fajitas

  1. Soak 1 bundle sweet potato noodles in 1 cup warm water and set aside.
  2. Put 1 kg cut up chicken in a pot, add 1 cup water bring to boil until tender.
  3. When cooked, removed water, add 6 - 8 dried chilies.
  4. Combine 2/3 cup of soy sauce, 2 tbsps oyster sauce, 1 cup water, 2 gloves minced garlic, 2 gloves minced ginger, 5 tbsps sugar, 4 tbsps corn syrup, and 1 tbsp black pepper.
  5. Pour over the chicken and chilies.
  6. Simmer for 20 mins.
  7. Add 1 sliced onion and 2 sliced carrots, 2 pcs diced potatoes to the pot, simmer for 10 mins.
  8. When the chicken and vegetables are tender, drain the noodles from the soaking water and add to the pot.
  9. Cook until the noodles are tender about 3-5 mins.
  10. Remove the pot from the heat and let it sit for 5 mins.
  11. Serve with rice.
