Chiken Fajitas

  1. Preheat oven to 350°.
  2. In a large pan, add 1 tbsp oil, 2 finely chopped small onions and 2 carrots. Add 4 garlic cloves, 1 tbsp Italian seasoning, 1/2 tsp crushed red pepper, and 1/4 tsp salt then cook for 5 mins.
  3. Stir in 3 1/2 cups chicken stocks, 4 tbsp basil, 2 tbsp tomato paste, 1 tbsp vinegar, pasta, and 1 can tomatoes. Bring mixture to a boil; cook until pasta is almost done, stirring frequently.
  4. Arrange mozzarella over pasta mixture. Bake at 350° for 15 mins or until pasta is done. Sprinkle with remaining 2 tbsp basil.
  5. In a saucepan, melt 1/2 cup butter over medium-low heat with 2 tsp garlic powder and 4 cloves minced garlic. Set aside.
  6. Sprinkle both sides of each sirloin with salt and pepper.
  7. Grill Sirloin for 4 to 5 minutes per side. When done, transfer to warmed plates.
  8. Brush tops with garlic butter, and allow to rest for 2 to 3 minutes before serving.
