Chiken Fajitas

  1. Cut 1 pineapple into rings, about ½ inch then cut the center core.
  2. Spray grill with cooking spray.
  3. Grill pineapple over medium flame for 2 minutes each side or until grill marks appeared.
  4. Heat 2 tsp butter, ¼ cup brown sugar and ¼ cup rum in a saucepan over low heat until sauce thickens. Remove from heat.
  5. Plate by placing pineapple and a scoop of cheese ice cream into the center of pineapple ring.
  6. Drizzle with 2 tsp rum sauce.
