Chiken Fajitas

  1. Preheat oven to 250 degrees.
  2. For fajita seasoning:
  3. Whisk together 1 tbs. chili powder, 1tsp. cumin, 1 tsp. paprika, ¼ tsp.cayenne pepper, ¼ tsp. garlic powder, 1tsp.salt, and 1 tsp.ground pepper in a small bowl. Set aside.
  4. Heat 1 tbsp. olive oil in a cast-iron grill pan or frying pan over medium-high heat. Add chicken and sprinkle with 3/4 of fajita seasoning.
  5. Mix together and cook for 6 to 10 minutes, or until browned.
  6. In a second pan, heat remaining 2 tbsp. oil over medium heat. Add 2 sliced bell peppers and 1 onion.
  7. Stir in remaining fajita seasoning. Cook until vegetables are soft, about 8 to 10 minutes, stirring occasionally.
  8. Wrap 8 small tortillas in tin foil and warm in oven.
  9. To assemble fajitas, fill warmed tortillas with chicken, sliced bell peppers, and onions. Top with favorite garnishes.
